Three Bean Chili
This is a filling vegetarian dish that can feed plenty.
Ingredients
- 1 Tbsp Vegetable Oil
- 1 Medium Onion diced
- 4 Cloves of Garlic minced
- 3 Tbsp Ground Cumin
- 2 Tbsp Chili Powder
- 1/4 tsp Smoked Paprika
- 1 Jalapeño Pepper Seeded, Minced
- 1 Red Bell Pepper Diced
- 1 Green Bell Pepper Diced
- 1-15.5 Oz. Can Black Beans
- 1-15.5 Oz. Can Pink Beans
- 1-15.5 Oz. Can Garbanzo Beans
- 28 Oz. Can Crushed Tomatoes
- 1 tsp Kosher Salt
- 1/3 Cup Cilantro Chopped
- 3 Scallions Thinly Sliced
Instructions
- Heat oil in large, deep pot.
- Saute onion until translucent.
- Saute garlic, cumin, chili powder, smoked paprika and jalapeños until fragrant. Add diced bell peppers to pot. Add the rest of ingredients except scallions and half of the cilantro to the pot. Simmer for at least an hour.
- Serve in a large bowl, garnished with scallions and cilantro along with rice, tortilla chips, sour cream and shredded, cheddar cheese.
