Spicy tolerance is relative to the consumer. We use scotch bonnet peppers in our patties. Sometimes depending on when the peppers were harvested, the peppers may be a little spicier. Our spicy is spicy to the general population. There are those few that think it is too spicy and some that tell us they add hot sauce to it to make it even more spicy. We offer a mild version of our beef patties that are considerably less spicy than the spicy beef.
Many of our ingredients are halal or kosher, however we are not certified.
We offer coupons periodically throughout the year at select retailers.
Baking the patties at a higher temperature for shorter amount of time will help prevent leaking. Make sure your oven is fully preheated to at least 400°F. You may even preheat your oven at a higher temperature and drop to the recommended temperature after the patties are put in the oven. The patties may leak if they are baked longer than the time stated on the instructions. The filling creates steam when it is baking. The longer it is baking the more steam needs to escape. Eventually, the crimp may open and filling will leak. If your patties started leaking before the dough was fully baked, you need to increase the temperature of your oven. This may mean you need to bake at 425-450°F. Be careful that you do not over bake the crust. Times and temperatures may vary due to differences in oven performance.
It is important to note, before baking meatloaf patties, there is a proofing step.
We created a video tutorial on how to do this: How to proof and bake meatloaf patties.
If the video is unclear, feel free to call us at 845.398.3000 and we would be happy to explain the process.
Here are written instructions:
BAKING INSTRUCTIONS:
- Remove frozen patties from container.
- Place a single layer of patties on baking sheet with liner. If liner is not available, spray baking sheet with non-stick vegetable oil. Leave 1 inch space around each patty. Place in refrigerator overnight to thaw or continue to next step.
- Proof: Place patty in proof box set at 110°F at low to no humidity for approximately 2 hours (if frozen) or 1 hour (if thawed) or until doubles in size. If do not have proof box, preheat oven to the lowest temperature and shut off oven when it reaches 100°F. If preheated to higher temperature, keep oven door ajar and check the oven thermometer that the internal temperature of the oven is between 100-110°F. If it's the summer or the room is warm, leave tray on counter, until dough doubles in size.
- Remove patties from oven if you are using your oven as the proof box. Preheat oven to 350°F. Bake using the following guides or until the patties are lightly brown:
Convection or Air Fryer Oven: 10-15 minutes
Conventional Oven: 15-20 minutes
CAUTION: Patties will be extremely hot. Allow product to stand for 5 minutes before serving.
IMPORTANT: Do not microwave! Baking times and temperatures may vary due to differences in oven performance.
The difference between frozen Unbaked and frozen Baked Patties is the crust. Unbaked patties have a raw crust while the Baked patties are fully cooked and ready to eat. The filling in both patties are fully cooked. The patties are all frozen. The Unbaked patties need to be fully baked and the Baked patties need to be reheated before consuming.
We currently do not process any peanuts or tree nuts in our facility.
An Air Fryer is a mini convection oven. Use the instructions for convection oven to reheat or cook patties. Oven times and temperatures may vary.
Preheat Air Fryer oven to 400 F. For frozen unbaked patties, cook for about 20 minutes or until internal temperature reaches 165 F and crust is firm to touch and golden brown. For frozen, fully cooked patties, reheat for 15 minutes until internal temp reaches 165 F.
